Ingredients
2 large green peppers
1/2 cup fine dry bread crumbs
1/3 cup grated Parmesan cheese
1 1/2 teaspoons salt
1/8 teaspoon pepper
1 egg, fork beaten
2 tablespoons water
Fat for frying
Directions
Clean green pepper and cut into 1/8 inch rings.
Cut each ring into halves or thirds.
Coat with a mixture of bread crumbs, cheese, salt, and pepper.
Dip into a mixture of egg and water.
Coat again with crumb mixture.
Chill 1 hour.
Heat a 1/2 inch layer of fat to 375°F in a skillet.
Cover surface with chilled green pepper strips.
Fry about 30 seconds, or until golden brown.
Remove strips with fork or slotted spoon.
Drain on absorbent paper.
Cut each ring into halves or thirds.
Coat with a mixture of bread crumbs, cheese, salt, and pepper.
