Fried Cornmeal Mush Recipe
Ingredients
1 cup cornmeal
1 cup cold water
3 cups boiling water
1 teaspoon salt
Directions
Grease loaf pan, 9x5x3 or 8 1/2X4/2X2 inches.
Mix cornmeal and cold water in saucepan.
Stir in boiling water and salt.
Cook, stirring constantly, Until mixture thickens and boils.
Cover tightly; cook over low heat 10 minutes.
Spoon cornmeal mush into pan.
Cover and refrigerate.
About 10 minutes before serving, invert pan to unmold cornmeal mush.
Have ready: 2 tablespoons butter or margarine; flour; syrup or jelly.
Cut loaf into 1/2 inch slices.
Melt butter in large skillet.
Coat slices with flour; brown on each side in skillet.
Serve hot with syrup and, if desired, with bacon, ham or sausage.
