Ingredients

 
The dry bowl of ingredients includes:
 
1 ½ cups yellow corn meal
 
½ cup flour
 
1 tsp baking powder
 
½ tsp baking soda
 
1 tsp salt
 
¼ cup red onion, finely chopped
 
¼ cup red bell peppers, finely chopped
 
1 tsp jalapeno, finely minced
 
1/8 tsp cayenne pepper
 
Wet bowl of ingredients:
 
2 eggs beaten
 
½ cup buttemilk
 
½ cup water
 
1 ½ tsp hot sauce

Directions

Mix all the wet ingredients together and add to the bowl of dry ingredients. Mix well. Let sit for 10-15 minutes. Scoop the batter into the fryer and deep fry. Drain and set aside.

Take 2 lbs of catfish and cut the fillets into manageable sizes. Take another bowl and add in it 1 ½ cups of flour, 1 tbsp of Cajun seasoning, 1 to 1 ½ tsp salt and mix well. Coat the cat fish slices with the flour mixture. Deep fry at a temperature of 360 to 375 degrees for approximately 8 minutes. Drain and keep aside.

Serve the fried catfish and hush puppies with tartar sauce.
