Pan Potato Kibbeh Recipe Video
Ingredients
Large potatoes - 2
Cracked wheat (bulgur) - 1 cup
Warm water - 1 cup to soak wheat
Olive oil - 1/2 to 1 cup
Salt, black pepper and allspice - to taste
For the filling you need:
Onion - 1 diced
Walnuts - 1 cup, chopped
Salt, black pepper, allspice and sumac
You can substitute for the sumac with pomegranate molasses - 1 tablespoon
Directions
GETTING READY
1. Wash, peel, dice and boil the potatoes until tender.
MAKING
2. Mash the potatoes and mix with salt, black pepper, and allspice.
3. Add the already soaked cracked wheat and mix with the mashed potatoes.
4. To mix together well, use your hands, this way you will get a feel of how wet or firm the dough is.
5. Add the olive oil gradually and sauté' the chopped onions until translucent.
6. Add the chopped walnuts and mix.
7. Add the spices.
8. At this point you can decide if you want to add the Sumac OR the Pomegranate Molasses.
To make the Potato Kubbeh in a pan ( Kubbeh bil Senyyeah):
9. Grease baking pan with olive oil.
10. Flatten half of the potatoes and wheat dough in the baking pan. Spread the onion and walnut mixture.
11. Add the top layer by flattening the dough into hand size pieces, add on top.
12. At the end smooth the top layer by wetting your hand in little water.
13. Cut into squares or diamond shape before baking and you may drizzle with olive oil on top.
14. Bake in a preheated oven at 450 degrees F for about 15-20 minutes until the edges are brownish in color.
15. Make sure the top layer has a nice golden color.
SERVING
16. Cool and then serve warm or at room temperature with green salad or yogurt on the side.
