Sprinkle with salt and pepper and dredge with flour; shake off excess flour.
Heat the bacon fat in a frying pan.
Add the tomato halves, a few at a time, and brown quickly on both sides.
Transfer to a heated serving dish and keep hot.
Stir the flour into the pan drippings.
Gradually stir in the cream.
Cook over low heat, stirring constantly, until thickened and smooth.
Taste and if necessary add a little more salt and pepper.
Pour the sauce over the tomatoes and serve immediately.
