Ingredients
Squabs- 3nos, cleaned and whole
Soy sauce- 2 cups
Water- 2 cups
Sugar- 1/2 cup
Cinnamon- 1 tablespoon
Star Anise- 1 or Ground Anise- 1/2 teaspoon
Fat- for deep frying
Directions
MAKING
1) In a saucepan, combine together soy sauce, water, sugar, cinnamon and star anise.
2) Bring the mixture to boil and place squabs in it.
3) Simmer for 5 minutes.
4) Remove from heat and cover the saucepan.
5) Let it stand for 30 minutes.
6) Drain the mixture and dry the squabs.
FINALIZING
7) In a wok heat the fat to 370°F and fry 1 squab at a time until browned from all sides.
8) Cut the squabs in quarters.
SERVING
9) Serve hot on a flat serving platter.
