Fried Smelts Recipe

Fried Smelts made using this recipe is an experience by itself. It is always prepared with Fish as the key ingredient. I never fail to eat Main Dish while dining out and this is the most common dish that I order. I challenge you to give me a better recipe of Fried Smelts than this.

Ingredients

 
1 1/2 cups dried bread crumbs
 
1 1/2 teaspoons salt
 
1/2 teaspoon pepper
 
4 eggs
 
1/4 cup water
 
2 pounds dressed smelts
 
1/2 cup salad oil
 
1 large lemon, cut into 6 wedges
 
Tartar Sauce

Directions

1. On waxed paper, combine bread crumbs, salt, and pepper. In pie plate, beat eggs with water. Dip fish, 1 at a time, first in egg, then in bread crumbs. Repeat, coating fish twice. Place fish on another sheet of waxed paper.
2. In 12-inch skillet over medium-high heat, in hot salad oil, fry fish, a few at a time, about 2 minutes on each side or until fish flakes easily when tested with a fork; drain on paper towels.
