Fried Smelts Recipe

1 lb (450 g) smelts
1 Cup (250 ml) milk
Flour
Salt
Sprigs of parsley
2 lemons
Directions
– In a deep fryer, heat oil to 375 °F (190 °C).
– Pat smelts dry with paper towel. Dip smelts in milk, dredge with flour, then shake off excess flour.
– Drop smelts into deep fryer and cook until golden. Let stand to drain on paper towel and season with salt.
– Place smelts in a serving dish, garnish with parsley and lemon wedges.
