Directions

1. In a small saute pan, heat the oil over high heat until very hot. Add a few sage leaves and fry for about 45 seconds, until the leaves are crisp and the edges begin to curl. Using a slotted spoon or long-handled strainer, remove the crisp leaves and drain on paper towels. Continue frying until all leaves are cooked.
2. Lightly sprinkle each batch of leaves with salt as they are fried. Store at room temperature until ready to use.
