Ingredients

 Oil2 Tablespoon
 Garlic1 Clove (5gm), chopped
 2.5 cm / 1 inch fresh root ginger, chopped
 Onions spring5 , finely sliced
 175 g / 6 oz prawns
 Soy sauce1 Tablespoon
 175 g / 6 oz frozen vegetables
 Eggs2 , beaten
 300 g / 10 oz cooked rice
 Salt To Taste
 Pepper To Taste

Directions

MAKING
1) In a pan, heat oil, and stir fry garlic, and ginger for 30 seconds.
2) Next, add spring onions by tossing for 30 seconds.
3) Add the prawns, stir for 1 minute.
4) Add the soy sauce and vegetables, stir for 2 minutes.
5) Mix eggs, prawns, and vegetables and let it set.

SERVING
6) Add the rice, toss with the other ingredients until hot.
7) Season and serve.
