Ingredients

 Vegetable oil1/2 Cup (16 tbs)
 Spanish onion1 , diced
 Celery stalks2 Large, sliced
 Green pepper1 To taste, cut into strips
 2 cups diced cooked chicken or pork
 Brown rice1/2 pound, cooked
 Water chestnuts1 6 Ounce, halved
 Almonds1/2 Cup (16 tbs), toasted
 2 eggs, lightly beaten
 Soy sauce

Directions

Heat oil in large skillet over medium-high heat.
Add onion and saute until translucent.
Stir in celery and green pepper and cook until crisp-tender
Add meat, rice, water chestnuts and almonds and heat through, stirring constantly
Blend in eggs until mixture is thoroughly coated.
Continue cooking, stirring frequently, until golden brown.
Season with soy sauce to taste and serve immediately.
