Libyan Fried Potato Pockets with Meat Recipe Video
|Ground lamb/Beef||1 Pound|
|Onion||1 Medium, grated|
|Cilantro||1 Cup (16 tbs), finely chopped|
|Parsley||1⁄4 Cup (4 tbs), finely chopped|
|Scallion||6 Medium, chopped (only the white portion)|
|Red chili powder||1⁄2 Teaspoon|
|Cinnamon||1⁄4 Teaspoon, powdered|
|Turmeric powder||1 Teaspoon|
|Garlic clove||3 Medium, minced|
|Tomato paste||1 Tablespoon|
|Olive oil||1 Tablespoon|
|White potato||6 Large|
|Flour||1 Cup (16 tbs)|

1 In a large bowl, combine one egg , spices, garlic and tomato paste with the ground meat.
2 Mix well to blend the ingredients.
3 In a pan, drizzle some olive oil on medium heat.
4 Add in the onion, and cook, stirring for a few minutes.
5 Add in the ground meat mixture.
6 Cook well until the meat is cooked thoroughly.
7 Correct the seasoning.
8 Transfer the meat to a large bowl.
9 Add the cilantro, parsley, and scallions to the cooked meat.
10 Mix well and allow the mixture to cool.
11 Meanwhile, peel the potatoes using a vegetable peeler.
12 Slice the potatoes in such a manner that each slice looks like a sandwich. (see the video)
13 Fill each potato sandwich with the meat mixture.
14 Dip it n the egg and roll in the flour to coat evenly.
15 Prepare all the potato sandwiches in the same manner and arrange on a plate.
16 In a frying pan, heat the oil until very hot.
17 Fry the potato sandwiches a few at a time as shown in the video, until golden.
18 Transfer to a tissue paper to soak excess oil.
19 Serve at once.
