Directions

Cut the pork into very thin slices and marinate for 30 minutes.
Wash and prepare the beans, cut them into 4-cm (1 1/2-in) lengths.
Deep-fry the pork for 30 seconds.
Remove and drain well.
Heat 2 tablespoons of oil very hot in a frying-pan and fry the beans for 30 seconds, then add 8 tablespoons of water and cook until the beans are tender but not soft, about 3 minutes.
Drain.
Add 1 tablespoon of oil to the frying-pan and fry the onion, ginger and garlic for 15 seconds.
Add the beans and pork and stir-fry for another 30 seconds.
Pour the soy sauce in at the edge of the pan, lift the pan from the heat while stirring and serve.
