| Water | 2 Tablespoon | |
| Lime juice | 2 Tablespoon | |
| Ginger | 1 Tablespoon, chopped | |

| Zest of orange | 2 Teaspoon |

Directions
# Mix together pork, scallions, eggs, hoisin sauce and bacon mixture. Season with salt and pepper.
# Assemble dumplings; put down one wonton wrapper. Place approx 2 tbsp filling in center. Brush edges with egg wash. Place another wonton on top. Press to seal edges. Set aside until ready to fry. Make ponzu sauce
# When ready: heat 1" of oil in a pan. Add a few dumplings at a time. Cook on one side until golden brown, flip and cook other side. Remove from oil and transfer to a plate lined with paper towels to absorb extra oil. Dip into ginger ponzu sauce while still hot. Arrange on plate and serve with extra hoisin sauce.
