Fried Okra Recipe
Ingredients
| 1 pound young medium okra | ||
| 2 eggs, beaten in a bowl with 1/2 teaspoon salt | ||
| 1 cup cornmeal, in a bowl | ||
| Peanut or salad oil for frying | ||
Directions
Wash the okra and trim off the stems.
Cut into 1/2-inch slices.
Turn into the bowl with the beaten eggs and toss with 2 forks until well coated.
With a slotted spoon, transfer the okra to the bowl with the cornmeal.
Toss again until well coated with the cornmeal.
Heat 1/2 inch of oil in a large frying pan.
Add the okra and stir.
Cover the frying pan and cook over medium heat, stirring frequently, until the okra is golden brown and crisp.
Drain on kitchen paper and serve very hot.
