Ingredients
Dried Mushrooms (Chinese, if available)- 10nos
Hot Water- 1/2 cup
Oil- 4 tablespoons
Bamboo Shoots- 1 cup, sliced
Spinach- 1 pound or Frozen- 1 package, thawed
Salt- 1 teaspoon
Noodles- 3 cups cooked and drained
Cornstarch- 2 teaspoons
Soy Sauce- 3 tablespoons
Directions
GETTING READY
1) In a bowl, soak the mushrooms for 30 minutes.
2) Drain the mushrooms, reserving the water.
3) Slice the mushrooms.
MAKING
4) In a wok, heat oil and sauté bamboo shoots and mushrooms for 3 minutes.
5) Add spinach and salt, cook for 1 minute, stirring constantly.
6) Add the noodles and cook for 3 minutes, stirring frequently.
FINALIZING
7) In a cup, mix together cornstarch, soy sauce and mushroom water.
8) Add the cornstarch mixture into the wok and stir until thickened.
SERVING
9) Serve hot, garnished with scallions.
