Ingredients
8 ounces Chinese-style thin egg noodles
Salt
Vegetable oil for frying
Directions
Cook noodles according to package directions until tender but still firm, 2 to 3 minutes.
Drain, rinse under cold running water and drain again.
Place several layers of paper towels over cookie sheets or jelly-roll pans.
Spread noodles over paper towels and let dry 2 to 3 hours.
Heat oil in wok or large skillet over medium-high heat to 375°F.
Using tongs or slotted spoon, lower a small portion of noodles into hot oil.
Cook until golden, about 30 seconds.
Drain on paper towels.
Repeat with remaining noodles.
