Fried Mush Recipe
Fried mush is a griddle cooked cornmeal mush. Seasoned and cut in slices, the cornmeal mushr is pan fried and can be served as a side or accompanying dish in meals.
Ingredients
3 cups boiling water
1 cup yellow corn meal
1 teaspoon salt
1 cup cold water
Yellow corn meal
Directions
In saucepan, heat 3 cups water to boiling.
Combine corn meal, salt, and 1 cup cold water.
Gradually add to boiling water, stirring constantly.
Cook till mixture thickens, stirring frequently.
Cover.
Continue cooking over low heat 10 minutes.
Pour into greased 8 1/1x4 1/2x2 1/2 inch loaf pan; chill thoroughly.
Unmold.
Cut in 1/2 inch slices.
Dip in additional corn meal.
Pan fry on lightly greased griddle or in skillet until golden brown, turning once.
