Fried Mixed Vegetables Recipe

Ingredients
2 Chinese mushrooms
1 small onion
1/2 green sweet pepper
3 oz. bean sprouts
5 canned water chestnuts
1/2 unpeeled cucumber
3 tablespoons celery
2 tablespoons peanut oil
6 slices canned bamboo shoots
1/4 pint (U.S. 5/8 cup) hot stock
Pinch each salt, sugar and Ve-Tsin
1/2 teaspoon soy sauce
1 teaspoon cornflour
1 dessertspoon cold water
Directions
After removing and discarding the stalks, cut the mushrooms in half.
Slice the onion.
Cut the pepper into 4-6 pieces and pick over the bean sprouts.
Quarter 1 chestnut and leave the others whole.
Slice the cucumber.
Heat the oil in the frying-pan.
Cook the onion in it for 1/2 minute.
Add the pepper, cook for 1/4 minute, then add the bean sprouts, celery and cucumber.
Add the mushrooms, chestnuts and bamboo shoots and cook for a minute or two, turning and tossing the vegetables.
Add the stock, seasonings and soy sauce and cook for 2 minutes.
Stir in the cornflour, blended with the water, and boil for 1 1/2 minutes.
