Ingredients

 Calf's Liver- 1 pound, cut into narrow strips
 Soy sauce2 Tablespoon
 Sherry1 Tablespoon
 Sugar1/2 Teaspoon
 Cornstarch1 Tablespoon
 Water1 Tablespoon
 Oil, Lard, or Chicken fat- 6 tablespoons
 Scallions1 , thinly sliced
 Salt1 Teaspoon
 Pepper1/4 Teaspoon

Directions

MAKING
1) In a bowl, toss the liver with the soy sauce, sherry, sugar, cornstarch and water.
2) Let the liver marinate for 5 minutes.
3) In a skillet heat fat and sauté the liver for 3 minutes, stirring frequently.
4) Add the scallions (reserve 1 tablespoon for garnish) and simmer for 3 minutes.
5) Season with the salt and pepper.

SERVING
6) Serve hot garnished with the reserved scallions
