Fried Liver Recipe
Ingredients
| Calf's Liver- 1 pound, cut into narrow strips | ||
| Soy sauce | 2 Tablespoon | |
| Sherry | 1 Tablespoon | |
| Sugar | 1/2 Teaspoon | |
| Cornstarch | 1 Tablespoon | |
| Water | 1 Tablespoon | |
| Oil, Lard, or Chicken fat- 6 tablespoons | ||
| Scallions | 1 , thinly sliced | |
| Salt | 1 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
Directions
MAKING
1) In a bowl, toss the liver with the soy sauce, sherry, sugar, cornstarch and water.
2) Let the liver marinate for 5 minutes.
3) In a skillet heat fat and sauté the liver for 3 minutes, stirring frequently.
4) Add the scallions (reserve 1 tablespoon for garnish) and simmer for 3 minutes.
5) Season with the salt and pepper.
SERVING
6) Serve hot garnished with the reserved scallions
