Fried Jerusalem Artichokes with Walnuts Recipe
Ingredients
| 850 g/1 lb 4 oz Jerusalem artichokes | ||
| Olive oil | 5 Tablespoon | |
| 1 tsp golden caster sugar | ||
| 85 g/3 oz walnut halves | ||
| 1 fat garlic clove, finely chopped | ||
| Parsley leaves | 1 Cup (16 tbs), chopped | |
Directions
1. Peel artichokes with a small knife and slice into chunks. Cook in a pan of boiling water for 5 mins, until tender, then drain.
2. Heat the oil in a heavy frying pan and saute artichokes for 10 mins until golden. Throw in the sugar, season, then add the walnut halves. Continue to cook until the walnuts are toasted, then toss in the garlic and parsley and serve.
