Fried Green Tomatoes Recipe
Ingredients
8 large firm green tomatoes
Unbleached white flour or cornmeal
1/4 cup butter
1/4 cup brown sugar
Salt and freshly ground black pepper
1 cup heavy cream
Directions
1. Cut off and discard a thin slice from top and bottom of each tomato. Cut each tomato into 3 thick slices. Dip each slice in flour or cornmeal.
2. Melt the butter in a heavy skillet. Add the tomato slices and sprinkle half the sugar over the slices. Fry until browned on the bottom. Turn slices, sprinkle with remaining sugar, and brown on the second side.
3. Turn the slices and reduce the heat. Season with salt and pepper to taste. Add the cream and heat until hot but do not allow to boil. The tomato slices should remain firm.
