Ingredients

 
1/2 pound dried prunes
 
1/2 pound dried apricots
 
3/4 cup sugar
 
2 cups sifted flour
 
1 teaspoon salt
 
2/3 cup shortening
 
1/4 cup ice water
 
Fat for frying

Directions

GETTING READY
1) In a bowl, add water to soak prunes and apricots.
2) Place on heat to simmer the prunes and apricots until soft.
3) Remove from heat and allow cooling.
4) Pit the prunes and return to the pan.
5) Add sugar to stir in.
6) Bring the liquid to a boil.
7) Remove from heat and again set aside to cool.
8) Drain off the excess juice.
9) Add remaining pulp to this and combine thoroughly.
10) Separately, sift flour and salt, all together.
11) Use half of the shortening to cut in with a pastry blender, until the mixture looks like corn meal.
12) Gently drizzle ice water on the mixture and moisten the flour mixture to sticky dough with the help of a fork.
13) Make a ball out of the dough and wrap with waxed paper to chill inside the refrigerator for an hour or so.
14) Make out 8 parts from the dough.
15) Roll the dough parts to 5-inch circles.
16) Spoon 1/8 part of the filling on half of each circle by leaving ½ inch space around the edge.
17) Wet the edge with water and fold in the other half on top of the filling. Secure the edges by pinching or pressing with a fork.

MAKING
18) Heat up deep fat to 375°F.
19) Drop the pies one by one into the hot fat and fry evenly on both sides to brown for around 5 minutes.
20) Transfer the pies over paper towels.

SERVING
21) Dust with confectioners’ sugar before serving.
