Ingredients
Eggplant- 1 large
Salt- 2 teaspoons
Cornstarch- 1/4 cup
Oil- 3 tablespoons
Miso- 1/2 cup
Soy Sauce- 1 tablespoon
Sugar- 2 tablespoons
Sake or Sherry- 3 tablespoons
Directions
GETTING READY
1) Cut the eggplant 1/2- inch thick.
2) Sprinkle with salt and let it stand for 15 minutes.
MAKING
3) Drain the liquid and lightly dip the eggplant in cornstarch.
4) In a skillet, sauté the eggplant until brown on both the sides and tender.
5) Mix together the miso, soy sauce, sugar, and sake or sherry in a bowl to make a sauce.
SERVING
6) Place the eggplant in a serving platter, pour the miso sauce over the eggplant and serve.
