Ingredients

 Eggplant1 Medium
 Flour1/4 Cup (16 tbs)
 Egg1
 Milk2 Tablespoon
 1/2 cup fine bread crumbs
 1/4 cup olive oil, butter, margarine or drippings
 Salt1/2 Teaspoon

Directions

1. Wash the eggplant and slice in 1/4-inch pieces. Do not pare. Dip slices first in flour, then in egg beaten until foamy with milk, then in bread crumbs.
2. Brown the slices on both sides in hot oil, butter, margarine or drippings. Sprinkle with salt just before serving.
