Directions

1. Rinse the cleaned and dressed chickens, wipe dry and cut in serving pieces.
2. Sift the flour with the salt and pepper; combine beaten egg and milk and stir into the dry ingredients; mix thoroughly. Dip the pieces of chicken into this batter.
3. Cut the salt pork in small cubes and heat in a heavy frying pan to make fat 1-inch deep. Remove bits of pork. When fat is hot, lay the pieces of chicken in, brown quickly, then cover the pan and cook slowly until tender, 35 to 60 minutes.
