Fried Chicken Maryland Recipe

| 100 g/4 oz butter, or ,8 tablespoons oil | ||
| 3 bacon rashers, rinded and cut into strips | ||
| 300 ml/ 1/2 pint single cream | ||
| Pineapple rings | 4 , canned | |
| Chopped parsley to garnish | ||
Directions
Mix the flour with salt and pepper and use to coat the chicken joints.
Melt the butter or heat the oil in a frying pan.
Add the chicken joints and brown on all sides.
Add the bacon, then cover the pan and continue cooking gently until the chicken is tender.
Gradually stir the cream into the juices in the pan and cook gently until thickened.
Do not boil.
Add the pineapple rings and heat through.
Adjust the seasoning and garnish with chopped parsley.
