Fried Chicken Recipe

Ingredients
One 3 1/2 pound chicken, rinsed and cut into 8 pieces
1 quart butter milk
3 cups flour
2 teaspoons paprika
1 teaspoon cayenne pepper
2 teaspoons salt, plus more to taste
1 teaspoon freshly ground black pepper, plus more to taste
Peanut oil
Directions
Arrange the chicken pieces in a single layer in a nonreactive baking pan.
Pour the buttermilk over the chicken, then cover and refrigerate for at least 2 hours, or as long as overnight.
Combine the flour, paprika, cayenne, 2 teaspoons salt, and 1 teaspoon pepper in a large plastic bag and shake to mix thoroughly.
Shake the chicken pieces one at a time with the seasoned flour in the bag until well coated.
Pour the peanut oil into a large cast-iron skillet to a depth of 3/4 inch.
Heat the oil over medium-high heat until very hot but not smoking, and add chicken, largest pieces first, skin-side down.
Reduce the heat to medium and cook, turning once, until the chicken is golden brown and crispy, 12 to 1 5 minutes per side.
Drain the fried chicken on paper towels and season to taste with salt and pepper.
