Ingredients

 
6-7 tablespoons celery
 
1 clove garlic
 
1 slice fresh ginger
 
1 tablespoon peanut oil
 
Pinch each salt, sugar and Ve-Tsin
 
2-3 shakes white pepper
 
1/2 teaspoon ginger sherry
 
1/4 pint (U.S. 5/8 cup) hot chicken stock

Directions

For this dish, use the inner stalks (but not the heart) of celery.
Cut the stalks diagonally into 1-inch strips.
Crush the garlic and ginger.
Heat the oil in a frying-pan, cook the garlic and ginger in it until golden brown and then discard them.
Add to the pan the celery, seasonings, sherry and stock and cook for 5-6 minutes.
The stock should almost disappear.
The celery will be cooked but still crisp.
