Fried Catfish Recipe
Ingredients
| 2 pounds catfish fillets | ||
| Garlic powder | 1/2 Teaspoon | |
| Tabasco sauce | ||
| Yellow cornmeal | 1 Cup (16 tbs) | |
| All purpose flour | 3 Tablespoon | |
| Vegetable oil | ||
| Tomato sauce or tartar sauce | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Season fillets with salt, pepper, garlic powder, and Tabasco sauce.
Cut fillets into 2-inch-wide strips.
In a shallow bowl, stir together cornmeal and flour.
Dredge fish in cornmeal mixture.
Fill a heavy skillet with oil to a depth of 1 inch.
Heat oil to 375°F.
Fry fish, 4 pieces at a time, until cooked and golden brown.
Serve with tomato sauce or tartar sauce.
