Fried Calf'S Liver Recipe

Ingredients
1 lb. calf's liver
1 cup very fine, dry unflavored breadcrumbs
5 tablespoons butter
2 fresh sage leaves or 1/2 teaspoon rubbed sage
Salt and freshly ground pepper to taste
Lemon wedges
Directions
Cut liver into thin slices.
Remove membrane and veins.
Spread breadcrumbs on aluminum foil.
Coat liver slices with breadcrumbs.
Press breadcrumbs onto liver with the palms of your hands.
Shake off excess breadcrumbs.
Melt butter in a large skillet.
When butter foams, add sliced liver and sage.
Cook over medium heat 2 to 2-1/2 minutes on each side or until liver has a light-golden crust.
Drain on paper towels.
Season with salt and pepper.
Place liver on a warm platter.
Garnish with lemon wedges.
