Cut the beef into thin slices and marinate for 30 minutes.
Wash and tear the greens into 8-cm (3-in) lengths.
Deep-fry the beef for 10 seconds, remove and drain.
Heat 2 tablespoons of oil and stir-fry the greens for 15 seconds.
Add 5 tablespoons of water and cook for about 2 minutes, stirring all- the time.
Drain if necessary and keep warm on a serving dish.
In the same frying-pan, without extra oil, stir-fry the beef slices for 15 seconds.
Then add the soy sauce carefully, lift the pan from the heat, mix well and serve on top of the greens.
