Fried Bean Sprouts Recipe

Ingredients
8-10 tablespoons bean sprouts
3 tablespoons very thin lean boiled ham
2 thin slices fresh ginger
1 small sliced onion
1 1/2 dessertspoons peanut oil
Pinch salt
Tiny pinch each sugar and Ve-Tsin
1/2 teaspoon ginger sherry
1 teaspoon sesame oil
1 dessertspoon chicken stock
Directions
Pick the bean sprouts over carefully, rinse and dry thoroughly.
Cut the ham, ginger and onions in thin strips and have them ready separately.
Heat 1 dessertspoon oil in a frying-pan and cook the onion pieces in it for 2 minutes, moving them about.
Add the ginger, cook for 1/2 minute, then add the bean sprouts and toss all about for 2 minutes.
Add the salt, sugar and Ve-Tsin and continue to turn the mixture over and over.
Finally, add the sherry, sesame oil and stock and heat through.
Turn all into a heated serving dish.
Wipe out the pan.
Heat the remaining oil in it then toss the thin strips of ham in it for 1/4 minute.
