Ingredients

 
1 cup (250 ml) commeal,cooked
 
3/4 cup (180 ml) salmon, cooked
 
1 small onion, finely chopped
 
Pinch of thyme
 
Salt and pepper
 
1 egg
 
3 tbsp (45 ml) milk
 
2 tbsp (30 ml) commeal, uncooked
 
2 tsp (10 ml) oil

Directions

–  In a saucepan containing 2 cups (500 ml) boiling water, cook 1 cup commeal for about 10 minutes.
–  In a bowl, combine cooked commeal, salmon and onion. Season with salt, pepper, and thyme. Refrigerate for 3 hours.
–  Meanwhile, beat egg, add milk and set aside.
–  Shape cold commeal mixture into croquettes. Dip into beaten egg and dredge in uncooked commeal.
–  In a skillet, heat oil and fry croquettes on both sides until golden.
