Fricasseed Brains Recipe

Ingredients
4-6 sets lamb's or calf s brains
1 onion, halved
1 tablespoon vinegar
1 teaspoon salt
1 cup Bechamel Sauce
12 small button onions, boiled
4 oz button mushrooms, trimmed and sauted in butter and lemon juice
Salt and pepper
Directions
Wash and remove skin from brains under running cold water.
Place in a saucepan with onion, cover with water, add vinegar and salt and bring to simmering point.
Simmer for 20 minutes.
Drain, cut in small pieces and place in Bechamel Sauce.
Add prepared onions and mushrooms, taste and adjust seasoning.
Heat through gently without boiling and serve on a heated dish.
