Fricassee Of Chicken Recipe

Ingredients
2 tablespoons butter
1 onion, finely chopped
1 1/2 tablespoons all purpose flour
Salt and pepper
1 1/4 cups milk
2 chicken bouillon cubes
2 tablespoons frozen minted peas
1/2 cup sliced mushrooms
2 tablespoons light cream meat taken from 1 x 3 1/2 lb cooked chicken, cut into pieces
2 tablespoons canned corn kernels
Garnish:
Toasted Crumbs, tomato slices
Directions
1 Place the butter in a 1 litre/1 3/4 pint (4 1/4 cup) jug, and microwave on full power for 1 minute.
2 Add the onion and microwave on full power for 1 minute.
3 Stir in the flour and salt and pepper and gradually stir in the milk. Microwave on full power for 3 minutes.
4 Beat well with a balloon whisk until a smooth, glossy sauce results. Beat in the crumbled stock (bouillon) cube and peas. Stir in the mushrooms and add the cream.
5 Put the chicken and sweetcorn into a large mixing bowl. Pour over sauce and mix to coat the chicken.
6 Pour into a 30 x 20 x 5cm/ 12x8x2 inch ovenproof glass dish and garnish with the Toasted Crumbs and tomato slices.
7 Reheat on power 7 for 4 minutes. Serve with Fluffy Rice
