Friar's Beard Chicory With Lemon Dressing Recipe
Ingredients
| Friar's beard chicory or substitute - 1 1/2 lb | ||
| Extra virgin olive oil | ||
| Lemon | 1 | |

Directions
GETTING READY
1 Trim the Friar's beard chicory.
2 Rinse it well and drain.
MAKING
3 In a large pot, bring salted water to a boil
4 Add in the Friar's beard chicory, stirring with a fork or a long handled spoon.
5 Friar's beard chicory should be boiled hard for 8-10 minutes until tender but still a little crisp.
6 Drain well.
7 In a bowl, put the boiled Friar's beard chicory and sprinkle with a little olive oil mixed with lemon juice.
8 Toss lightly to coat.
SERVING
9 Serve warm.

10 If Friar's beard chicory is not available, you can substitute it with your favorite edible leaf vegetable
