Recipe Story

To avoid buying pre-mixed boxes and the addatives they have at a high price - I make these ahead of time for a healthy home made corn bread on the go.

Ingredients

 Dried corn1⁄2 Cup (8 tbs) (Should Make Approx Amount Of Flour Below)
 White wheat grain1⁄2 Cup (8 tbs) (Soft, Should Make Approx Amount Of Flour Below)
 Corn meal3⁄4 Cup (12 tbs)
 Wheat flour3⁄4 Cup (12 tbs)
 Salt1⁄2 Teaspoon
 Baking powder2 1⁄2 Teaspoon
 Sugar/Sucanat1⁄4 Cup (4 tbs)

Directions

Preheat oven to 425 with 3 TBS butter in 10-12 inch iron skillet or 8×8 Pyrex dish inside oven. You will need to watch this and now move fast….

Make a ‘well’ in the middle of the dry mix and add :
3/4 C butter milk (or *soured milk)
2 TBS Honey (omit if you used sugar/succanat in dry)
1 egg

~BEFORE YOU STIR THIS TOGETHER~ take pan out of oven and pour in melted butter. Be sure to leave bottom of pan well coated for non-stick purposes.

Mix ingredients and quickly pour into hot buttered pan. Replace in oven on middle rack for about 20-25 minutes.

Slice within the pan and serve with butter, honey or molasses.

* this does need to be made ahead of mixing dry ingredients… soured milk = add 1 TBS of vinegar or lemon juice for every 3/4C milk

Variations:
Add one can of drained corn (or 1C frozen)
