1 In a large stock pot, place the turkey carcass.
2 Pour in water to cover it completely.
3 Let it simmer for about an hour.

Homemade stock has an incredible flavor and richness that takes the finished dish to a completely different level and its ten times cheaper or rather almost free cause you make it using ingredients that you would throw away anyway.
