Fresh Tomato Soup Recipe
Make your palate fall in love with this Fresh Tomato Soup recipe. I prefer to make Fresh Tomato Soup as an Appetizer for all my family get-togethers. Try it and feel free to pitch in suggested improvements or variations.
Ingredients
1 1/2 tbsp. butter
6 green onions with tops, sliced paper-thin
3 cups peeled, chopped tomatoes (3 large)
15 1/2-oz. can okra, drained (optional)
1 1/2 cups chicken stock
1 tbsp. lemon juice
1 1/2 tsp. sugar
Salt and pepper
Directions
Melt butter in medium saucepan.
Add onions and cook gently 3 minutes or just until limp but not brown.
Add tomatoes, cover and cook gently 5 minutes.
Add okra, chicken stock, lemon juice and sugar.
Taste and add salt and pepper if necessary (amount will depend on seasoning of chicken stock).
Cover and simmer 5 minutes.
Serve very hot.
