8 ounces halibut steaks
 
2 tablespoons sweet butter
 
2 cloves garlic, crushed
 
2 medium onions, sliced into thin wedges
 
1 fresh chile, trimmed and partially seeded
 
1 bay leaf
 
4 tomatoes, sliced into wedges or 1 15-ounce can chopped tomatoes in sauce
 
1 to 2 teaspoons garam masala or curry powder

Directions

Rinse halibut, pat dry.
In a heavy skillet, heat 1 tablespoon butter over medium heat until foamy.
Add garlic and brown on all sides; reduce heat and add onions, chile, and bay leaf.
Cook, stirring several times, until onions are soft.
Add tomatoes, cook for 3 minutes; add garam masala to taste.
Slide halibut into bubbling sauce, partially cover pan, and poach until opaque and firm (this may take from 12 to 20 minutes, depending on thickness of steak).
Remove and discard bay leaf and garlic.
