Ingredients
White-Wine French Dressing:
White-Wine Vinegar- 2 tablespoons
Lemon Juice- 2 tablespoons
Salad Oil- 1/2 cup
Salt- 1 teaspoon
Pepper- 1/4 teaspoon
Sugar- 1 teaspoon
Dry Mustard- 1/2 teaspoon
Garlic- 1 clove(optional)
Salad:
Tender Young Spinach- 3/4 lb., washed and stems removed
Green Onions- 6 no., thinly sliced (1/4 cup)
Radishes- 1/2 cup, sliced
Cucumber- 1 small, pared and thinly sliced
Directions
GETTING READY
1) Tear the spinach leave in small pieces.
2) In a jar, place all the dressing ingredients.
3) Cover the jar with tight-fitting lid and shake vigorously.
4) Place the jar in refrigerator, refrigerator until ready to use.
MAKING
5) In a salad bowl, place the spinach leaves.
6) Place the remaining vegetable over the spinach.
7) Cover and place the salad bowl in refrigerator for about 2 hours.
8) Discard the garlic from dressing, and shake vigorously.
SERVING
9) Stream the dressing over salad and toss until spinach is well coated.
10) Pile the salad on serving bowl and serve.
