Ingredients

 
1 pound cooked fresh salmon or tuna
 
1 teaspoon minced fresh dill or 1/2 teaspoon dried
 
1/2 teaspoon minced fresh tarragon or 1/2 teaspoon dried
 
3 tablespoons olive oil
 
2 doves garlic, pressed
 
1/2 teaspoon freshly ground white pepper
 
4 plum tomatoes, diced
 
1/4 cup walnuts, toasted

Directions

Skin and bone salmon; flake into good sized chunks.
Add dill and tarragon to oil.
Add garlic and at least 1 teaspoon pepper; stir to blend.
Toss tomatoes with salmon in the dressing.
Cover and chill.
Before serving, bring salad to room temperature for best flavor.
Add toasted walnuts to salad when you take it out of the refrigerator; this keeps the nuts crunchy but lets the flavors mix a bit
