Directions

Combine pineapple, red peppers, onions, garlic, gingerroot, brown sugar, cider vinegar, and cinnamon sticks in a large, heavy saucepan.
Cook over low heat until sugar is dissolved.
Add black pepper, cloves, and red pepper flakes.
Simmer for 25 minutes, stirring frequently.
Stir in raisins and cook for 5 more minutes.
Cool.
Variation * Delete cinnamon sticks, raisins, and 1 1/2 cups pineapple.
Add 1 apple, cored and diced; 1 pear, cored and diced; 1/2 tablespoon cumin; and 1 teaspoon curry powder.
