Fresh Peach Cobbler Recipe
Ingredients
6 to 7 large ripe peaches
2 Tablespoons of sugar
1 Tablespoon of soy margarine
2 teaspoons egg replacer to equal 2 eggs, dissolved in 1/2 cup of water
1/2 cup sugar
1 cup flour
1 teaspoon baking powder
1 teaspoon vanilla
1/4 teaspoon nutmeg
Directions
Prepare a 9" x 9" baking dish by spraying with nonstick vegetable spray.
Peel and slice the peaches into the dish.
Sprinkle them with sugar and dot with margarine.
Preheat the oven to 350 degrees and prepare the batter as follows.
Beat together the egg product and water.
Measure the dry ingredients.
Stir together the dry and wet ingredients and pour the batter over the peaches.
Bake in a preheated 350 degree oven about 30 minutes until lightly golden.
