2 tablespoons salt
 
Water
 
7 cups sliced fresh peaches
 
3 cups sugar
 
1 1/2 cups cider vinegar
 
2 large cloves garlic
 
1 cup chopped onions
 
1 teaspoon ground ginger
 
1/4 teaspoon crushed red pepper
 
3/4 cup lime juice
 
1 cup raisins
 
1/2 cup chopped candied ginger

Directions

Add the salt to a quart of water; pour over the peaches.
Let stand one day.
Drain.
Mix one quarter cup water, the sugar, vinegar and garlic.
Bring to a boil, add peaches and cook until they are clear, about forty five minutes.
Remove peaches from syrup.
Add onions, spices, lime juice and raisins to syrup.
Cook until thickened, twelve to fifteen minutes.
Add peaches and candied ginger; bring to boiling point.
Ladle into hot sterilized half pint jars.
Seal at once.
