Directions

In top of double boiler, beat eggs and egg yolk slightly; add sugar, butter or margarine and lime juice.
Cook over simmering water, stirring frequently, 20—25 minutes until thick and smooth.
Chill thoroughly.
Use as filling for 2 cake layers or as topping on individual sponge rounds.

You need to add like 2 tbsp of cornstarch to thicken it, if not thickened enough you can add more until desired
