Fresh Lemon Cookies Recipe

Ingredients
1 cup all-purpose flour
2 teaspoons baking powder
1/8 teaspoon salt
2 tablespoons margarine, softened
1/2 cup sugar
1 egg
1 tablespoon grated lemon rind
2 tablespoons lemon juice
Vegetable cooking spray
Directions
Combine flour, baking powder, and salt in a small bowl; set aside.
Cream margarine in a medium bowl until light and fluffy.
Gradually add sugar, bearing well.
Add egg, lemon rind, and lemon juice, beat well.
Add flour mixture, and stir until blended.
Drop dough by heaping teaspoonfuls onto cookie sheers lightly coated with cooking spray.
Bake at 350° for 10 minutes or until edges are lightly browned.
Cool slightly on cookie sheets; remove to wire racks, and cool completely.
