Ingredients

 
1.5 cups semolina
 
2 Tbs water
 
1 Tbs olive oil
 
2 eggs
 
1/2 tsp salt
 
flour for rolling
 
3 bell peppers, chopped
 
1/2 onion diced
 
1 Tbs olive oil
 
4 oz chopped mushrooms
 
4 oz baby spinach
 
2 Tbs chopped parsley
 
4 chopped cherry or baby roma tomatoes
 
1 Tbs shaved Parmesan

Directions

Combine semolina with eggs, water, oil and salt. Knead to make a smooth ball. Roll out with pasta maker
and cut into fettuccine. Boil for 2 mins. Saute onion, bell pepper, mushrooms in oil until tender Add spinach, cook down. Turn pasta
out into a large bowl and toss with veggies, add a few chopped raw cherry tomatoes sprinkle with parsley and parm
