Directions

Thinly peel pears and peach, halve and core.
Wash apricots, but do not peel.
Halve, and remove pits.
Combine sugar and water in saucepan, and heat to boiling.
Put in pears, and cover.
Let simmer gently 2-3 minutes.
Add peach and apricot halves, and simmer 4-5 minutes more.
With slotted spoon, remove cooked fruit to serving bowl.
Boil syrup a few minutes until it thickens slightly.
Remove from heat, and add lemon juice, judging amount according to sweetness of fruit syrup.
Pour over fruit.
Chill thoroughly before serving.
Note: Various other fruits may be used in this simple compote.
Washed cherries (do not pit) should be simmered 6-7 minutes.
With plums, prick skins before adding, and cook until just tender.
Strawberries, raspberries and blackberries should not be cooked on stove.
After washing, place in bowl with cooked fruits to mellow in hot syrup.
